Grilled Octopus

Ingredients (4 people):

  4 to 6 cooked octopus legs (according to size)
  Extra Virgin Olive Oil
  Coarse salt

Preparation:

 

Lightly grease the griddle or grill with olive oil; it should be only very thinly coated.

Preheat the griddle until very hot. Place the octopus on it and sear for a few seconds on each side. Once it is charred and golden brown, remove from the heat.

Serve immediately, as octopus can toughen if it cools down. Season with coarse salt just before plating.

Finish with a drizzle of olive oil and serve with boiled potatoes, chopped parsley or cilantro, and a touch of paprika.
